Breakfast

  • Breakfast Wraps
    • Scrambled eggs, breakfast sausage, sharp cheddar, scallion, toasted corn tortillas.
      Side of grilled pico de gallo.
    • Scrambled eggs, port butter seared mushrooms, parmesan, spinach, flat grilled naan.
      Side of spicy ketchup.
  • Breakfast Casserole–basically a fluffy savory bread pudding.
    • Custard (eggs, cream), sour cream, thick slab apple wood bacon, baguette, Jarlsberg.
    • Custard, sour cream, grilled zucchini, squash and red onion, spinach, baguette, pesto, parmesan.
  • Filipino Breakfast
    • Longanisa (garlic brown sugar sausage–chicken or pork), over medium eggs, toasted garlic jasmine rice.

    • Scrambled eggs with choice of apple chicken sausage, kasewurst, polish, Italian, breakfast links.
  • Biscuits and Gravy
    • Fluffy biscuits topped with gravy loaded with well browned sausage. No, it’s not a powdered mix, my friend.

    Choice of toasted bagels, toasted English muffins, mini croissants, flat grilled naan, scones, fruit muffins (banana, blueberry, banana), ham and cheese croissants, Nutella croissants–you want it? We’ll make it.
    Served with choice of butter, Nutella, Biscoff cookie butter (smooth or crunchy), blueberry, blackberry, balsamic strawberry or peach preserves.

I found a bag recently filled with newspaper articles that Dad had saved. It inspired me to do my best with toffee factory this week—especially since I have never waited this long to fire up my candy cauldron. I started pouring actively on Tuesday. I hoped to pour 111 pounds a day, but fell short. Instead of 555 pounds, I poured 444 in five days. It is still a record and I may be able to catch up tomorrow if pour six batches. It is a lofty goal and I am not sure that I want to finish the week with 666 pounds. Maybe I will pour five batches, finish at 629 pounds and call it a day? My end goal is to pour way more than that in the next three weeks while juggling catering events. I realized a few things this year:If I wanted to keep up that grueling schedule, every day I would have to have to have 30 pounds of butter and 30 pounds sugar on hand along with 40 pounds of almonds constantly roasting in the oven. The corn syrup and water are token amounts compared to this. Remembering to keep those almonds roasting is challenging because it takes up five full sheet pans.But get this: two years ago my commercial oven died and I had to roast nuts at home every night. I could only get two half sheet pans in my dinky oven. It took HOURS. But I did it because if there is one thing that they teach at the Culinary Institute of America it is this: you do your best with what you have and you deliver no matter what, Chef.I discovered that I always have to have 13 1/2 sheet pans ready for three batches of toffee. It is not just about pouring it. It takes time to let the chocolate and nuts set, flip it, get the other side chocolated and nutted. Then that has to side set. While waiting bags need to get stickered and labeled—THEN the candy can get broken down, weighed and bagged.There are a lot of steps, my friend.Another revelation that I had today was that it does not take long to get a third-degree burn when you get brittle on your hand while making it. I am grateful that my skin did not peel right off once I got the hot candy off of my left hand. I kept it in cold water (not icy) for six hours while my seasonal helper and today my niece assisted me in packaging. One-handed toffee making? It can be done.If you ever think that my attention, patience, magic and love does not go into every bag, you are wrong.
